Teriyaki Bowl


I love me some good bowls! bowl feel so nourishing and really hearty! And this teriyaki bowl is one of my favourites yet! I have a deep love for anything asian inspired and this dish ticks all the boxes!


Using a basmati based topped with a crunchy sour salad and topped with sticky sweet and sour mushroom meat! the perfect midweek meal! So lets get to it.


The mean ingredient of this dish. is king oyster mushrooms! This mushroom when shredded mimik meats texture so well and they really absorb any. flavour or marinade you soak them into! Making them a perfect healthy meat and process free substitute.


If you cant find oyster mushroom on your area you can substitute this with green jackfruit or any other type of mushroom you have at hand. (If you are using portobello or any similar type of mushroom don't shred it just give it a bit of a chop!)

I love everything with mint and coriander! It really makes any recipe feel fresh and full of flavour. I made a salad bae to go under the teriyaki meat to bring that crunch and freshness into the dish but you can enjoy this simply with rice if you are short in time and its equally delicious!


I recommend using basmati rice as this goes perfectly with the dish, but you can also substitute this with any type of white rice you have at hand.


The sweet and salty combo of the teriyaki meat is the perfect combo with the sourness of the salad and it really bring this dish together! Plus it makes this recipe look so beautiful when served! it is a real show stopper for any guest you have!



Teriyaki Bowls


Serves: 3-4

Prep time: 1hr 10 min

Cooking time: 10 min


Ingredients


Teriyaki Minced "Meat"

  • Oyster Mushrooms

  • 1/4 cup sesame seed oil

  • 1/2 cup soy sauce

  • 1/2 cup teriyaki sauce

  • 1/4 cup maple syrup

  • 1/4 cup Rice vinegar

  • 1 Spring onion Chopped

  • 1 tbsp ginger, grated or minced

Bowl

  • 1 cucumber, finely chopped

  • 1 red bell pepper, finely chopped

  • 1 spring onion, finely chopped

  • 1/3 cup coriander, finely chopped

  • 1/3 cup Fresh mint, chopped

  • Juice of 1 lemon

  • 1 tbsp soy sauce

  • 1 tbsp sesame seed oil

  • 3 cups basmati rice, cooked


METHOD

  1. Shred Oyster Mushrooms using a fork or your fingers to create "meat" strips

  2. Add all teriyaki meat ingredients into a fridge safe container. Close with a lid and shake until all mushrooms are covers with the rest of the ingredients. Marinate in the fridge for minimum 1 hour ( the longer you marinate the better the flavour).

  3. Prepare your salad bowl by adding all bowl ingredients, except rice, into a bowl and mix until well combined.

  4. Once teriyaki meat has marinated, bring a pan to medium heat and transfer oyster mushroom mixture into the heated pan and cook until sticky and golden brown ( around 7-10 min).

  5. Assemble your bowl by adding cooked basmati rice, salad and teriyaki meat on top. sprinkle some sesame seeds on top (optional) and enjoy!
