3 Ingredient Lentil Tortillas

Forget about your plain lentils and rice and give this lentil tortillas a try! Since I was diagnosed with Celiac disease I had to give up all forms of gluten and flour tortillas was one of the hardest things to give up since I am a taco addict! But this 4 ingredient flourless lentil tortillas will only keep you asking for more!⁣



Prep Time: 1 hr

Cook Time: 10 min


Ingredients

  • 1 Cup lentils⁣

  • 1 tsp turmeric ⁣( I used diosa dorada @bosque_encantado_gt )

  • 1 tsp salt⁣

  • pepper to taste⁣

Optional: 1/2 tsp cayenne pepper⁣

Method

  1. Soak lentils in 1 1/2 cup of hot water for 2 hours. After they finish soaking transfer water and lentils to a blender and add turmeric, salt and pepper and an additional 1/2 cup of water and blend until you get a "pancake mix" consistency.

  2. Heat a pan to low heat and add your mixture as if you were cooking regular pancakes. Cook for 2 min each side!⁣
