A quick and easy dinner recipe that requires no cooking just blending and cooling off. This raw gazpacho soup is perfect for hot summer days, it is so refreshing and light. And the best part you can have dinner sorted in 10 min. I topped mine with some coconut yougurt, basil leaves and some mixed nuts.
