Simple vegan chocolate layered birthday cake with a peanut butter buttercream for the perfect celebration cake!

This cake is made with simple and basic ingredients making it an easy vegan cake every one can enjoy. This gluten free cake can also be made sugar free by substituting the white sugar for monk fruit or xylitol.

This recipe is very indulgent and will not let down you chocolate craving. Have it with a glass of oat or almond milk on the side and you’ll have the perfect cake slice!

Choc Layered Cake with Peanut Butter Frosting


Serves: 6-8 Slices

Prep Time: 15 min

Cooking Time: 25 -30 min




Ingredients


Chocolate Cake

  • 2 cups Gluten Free Flour ( I used Buckwheat )

  • 3/4 cup Cacao Powder

  • 1 tsp baking soda

  • 1 Cup Chopped Dark Chocolate

  • 1 1/2 Cup Coconut sugar ( or xylitol/ monk fruit for a sugar free option)

  • 1/2 Cup Smashed Banana

  • 1/2 Cup Vegetable Oil

  • 1 Tbsp Vanilla extract

  • 1 1/2 cup Plant based milk


Peanut Buttercream

  • 1 can Coconut Cream

  • 1 Cup Peanut Butter

  • 1/2 Cup Powdered Sugar

  • 1 tsp Vanilla Essence


Method


  1. Preheat the oven to 350ºF/176ºC. Grease and flour three 6-inch round pans.

  2. Add flour, baking soda, cacao, sugar and salt into a large bowl and mix to combine.

  3. Carefully melt dark chocolate and add into a bowl with the vanilla extract, plant based milk, smashed banana and vegetable oil. Mix until silky and smooth. Then proceed to add it to the dry ingredients and stir until combined.

  4. Place batter into round 6 inch pans and bake for 25-30 min until batter rises and a toothpick inserted into the center comes out clean. Remove from oven and let cool completely off before removing it from the pan.

  5. Once cooled prepare frosting by placing coconut cream and peanut butter into a bowl and whisking it with a stand mixer or whisker until light and fluffy. Lower the speed of the hand mixer and add the vanilla extract and sugar a little at a time while continuously whisking.

  6. Frost the cake by placing the peanut buttercream in between the layers and smoothing it out into an even layer with a spatula. Top with the rest of the buttercream add sprinkles and enjoy!
