Ingredients
3 Tbsp Chia Seeds
1 Tbsp cacao powder
3/4 Cup Chocolate plant based milk ( My favourite is Oatly Chocolate Milk)
1/2 Cup Coconut yogurt
1/2 Cup Pumpkin puree
1 1/2 tsp pumpkin spice ( Or alternatively 1/2 tsp cinnamon, 1/2 tsp all spice, 1/2 tsp nutmeg)
1 tsp vanilla extract
1-2 Tbsp maple syrup
Method
Combine chia seeds, chocolate milk and cacao powder in a bowl. Whisk until well combined and set in the fridge for 1 hour.
While chia pudding is setting combine coconut yogurt, pumpkin spice, maple syrup, vanilla extract and pumpkin puree in a bowl and whisk until well combined and smooth.
When your chia is set and has absorbed all liquid separate mixture in half and serve into each jar or bowl. Repeat with the coconut pumpkin spice mixture. Top with cacao nibs, more plain yogurt, coconut flakes or banana. Enjoy!
Notes: If you can get your hands on some Vanilla Coconut Collaborative yogurt I strongly recommend it it is by far my favourite yogurt yet! The consistency is so creamy and thick)
