Coconut Macaroons

The best healthy Coconut Macaroons made with only 4 ingredients that you know and love, this sweet and chewy coconut macaroons are dairy free, refined sugar free, gluten free and paleo friendly! Just get your blender or food processor ready and get ready for some coconut baking!




Coconut Macaroons


Serves: 10, larger macaroons

Prep Time: 10 min

Cooking Time:12-16 min



Ingredients

  • 1 1/4 Cups Unsweetened shredded coconut (small pieces)

  • 1/4 Cup Almond Flour

  • 3 Tbsp of coconut oil, solid

  • 1/4 Cup Maple syrup


Method

  1. Preheat the oven to 350°F/121ºC. Line a baking sheet with parchment paper.

  2. Add all ingredients to a blender or food processor.

  3. Blend until you get a thick and sticky mixture.

  4. Using a small ice cream or cookie spoon, scoop the mixture and firmly packed it into balls. Place each ball on your baking sheet, making sure to leave space between each ball.

  5. Bake for 12-16 mins, until golden around the edges and slightly golden on top.

  6. Once baked place baking sheet on top of a cooling rack and let macaroons cool down for 30 mins to 45 min.
