Tacos are my love language in any form, shape, version or flavour. Birria tacos is a traditional Mexican taco were the tortilla is dipped into a rich pepper sauce and then filled with meat and cheese. They are so rich in flavour and texture that simply burst into your mouth!

So I decided to veganise this recipe, and even though this recipe is a simplified version of the traditional recipe it is so rich on taste and simply one of my favourite vegan taco recipes to date!

For this recipe I used flour tortillas and fajita seasoning as getting all the traditional peppers is a hustle if you live in an area with access to this ingredients! so this is a simple version to birria tacos.

They are stuffed with stuffed with juicy, savory marinated oyster mushrooms. If you are familiar to Mexican cuisine you will love the vegan version of this tacos that will bring you all the good latin food memories! This dish brings me a little close to home as a latin girl that loves tacos having this vegan option that taste so delicious makes my heart happy and full!
PSD if you try this recipe out I highly recommend marinating them over night for a deeper and stronger flavour! But if you are in a rush or run out of patience marinating them for an hour would do the trick too!

Easy Vegan Birria Tacos
Serves: 6-8 Tacos
Prep Time: 15 minutes
Marinate: 1hour
Cooking time: 10 min

Ingredients:
1-2 Lb King Oyster mushrooms
6-8 Flour or Corn Tortillas
1 cup vegan shredded cheese
Cilantro or parsley and onion to top
Marinate
1/3 cup Olive oil
1 tsp Black Pepper
1/2 tsp Salt
1/2 tsp Cayenne Pepper
1Tbsp Fajita Seasoning Powder
1 tsp Onion Powder
1 tsp Garlic Powder
1/3 cup Liquid Smoke or Tamari/ Soy sauce
3 tbsp Tomato paste
1/3 cup water
Method
Wash and pat dry your mushrooms.
Using a fork or fingers shred mushrooms into small strips to get that meaty texture.
Mix marinate ingredients in a bowl or container and mix well.
Add mushrooms and toss until all pieces are cover in marinade and place in the fridge to marinate for 1 hour or overnight ( the longer the time, the better the taste gets!)
Once marinated remove from the fridge add olive oil to a medium heated pan and add mushroom mix and cook until mushrooms are soft and slightly browns and crunchy.
While mushrooms cook, place one tortilla at a time on top of the mix so the tortilla sucks in the flavour of the marinade and set aside into another plate until the mushroom meat is ready.
Once mushroom meat is cooked transfer to a bowl. Using the same pan add one tortilla at a time, add mushroom meat to one side of the tortilla, add cheese and fold.
Cook the taco for 30 second on each side and repeat with all tacos.
Top with onion cilantro and lime juice to taste. Enjoy!
