Ingredients
1- 14 onz. can of chickpeas, rinsed and drained ( Alternately 2 Cups if chickpeas).
3/4 cup smooth peanut butter
1/2 cup maple syrup or agave
2-3 Tbsp cup brown sugar
2 tsp vanilla extract
1/4 cup hemp seeds or flaxseeds (optional)
1/2 tsp baking soda
1 cup dark chocolate chips (85% at least), chopped
Method
Preheat oven to 350ºF / 175º C and line a baking sheet with parchment or baking paper.
Add drained chickpeas, hemp seeds, vanilla, baking soda, sugar, peanut butter and maple or agave syrup in a food processor and blend until smooth.
Transfer mixture into a bowl and add chocolate chips and with a spatula fold until well combined. ( The batter will be very sticky)
Drop 2 full tablespoons of batter into the prepared baking sheet and shape your cookies. Bake for 12-14 min. Remove from oven and let cool for 10 min.
Tips: When baking time is finished cookies will seem very soft and not thoroughly cook but after the 10 min cool off period they will thicken up and become very fluffy and moist! (Do not keep cooking any further if looking soft this will burn the chocolate and cookie top.)
