Changing my weekly chickpea hummus for this oil free pea hummus with a touch of mint. It’s so refreshing and such a great dip for spring and will take you no longer than 5 min to prepare! Ingredients
1 tin of (400 g) drained green peas
1 tin (400g ) drained butter beans
2 tbsp tahini
1 garlic clove
1 tsp dry mint
1 handful of fresh spinach
Juice of 1 lime
2-3 tbsp water
Salt and pepper to taste .
Method
Blend everything in a food processor until creamy and smooth. For smoother consistency add a splash of water.
