Grilled Asian Artichokes

How beautiful are artichokes right? Artichoke season is here and I couldn’t wait to get my hands on one of these giant green beauties and roast them with an asian marinade and a mustard, lemon , salt & pepper and tahini dressing! Have you ever tried artichokes? If your answer is no to are seriously missing out! #thefitstitch




Serves: 3

Prep Time: 15 min

Cooking Time: 40 min



Ingredients

  • 3 Artichokes⁣

  • 2 large fresh lemons, juiced⁣

  • 2 tablespoons sesame seed oil⁣

  • 2 tbsp soy sauce⁣

  • 1 tbsp agave or maple syrup⁣

  • 1 tsp of ginger powder.⁣


Mustard Tahini Dressing

  • 1/4 Cup tahini

  • 1 tsp dijon mustard

  • 1 tsp maple syrup

  • juice of 1 lime

  • pinch of salt and pepper

  • 2 tbsp water


Method

  1. Heat oven to 400°F. With a knife remove artichoke stems and about one inch of the artichoke top and rinse the artichokes with water. Cut artichokes on half and use a spoon to remove the "fuzzy hairs" in the middle.

  2. Rub half a lemon wedge all over the artichoke to prevent browning.

  3. Whisk marinade ingredients together until well combined. Place artichoke halves in a baking sheet, cut side up and brush the cut sides with marinade.

  4. Fill in cavities with the rest of the marinade let them sit for 5 min then flip and bake uncovered for 15 min. Then cover them with foil and bake another 25 min.⁣

  5. While your artichokes are cooking add all dressing ingredients and whisk until well combined. Dip your artichoke leave on the sauce and enjoy!
