Ingredients
3 Artichokes
2 large fresh lemons, juiced
2 tablespoons sesame seed oil
2 tbsp soy sauce
1 tbsp agave or maple syrup
1 tsp of ginger powder.
Mustard Tahini Dressing
1/4 Cup tahini
1 tsp dijon mustard
1 tsp maple syrup
juice of 1 lime
pinch of salt and pepper
2 tbsp water
Method
Heat oven to 400°F. With a knife remove artichoke stems and about one inch of the artichoke top and rinse the artichokes with water. Cut artichokes on half and use a spoon to remove the "fuzzy hairs" in the middle.
Rub half a lemon wedge all over the artichoke to prevent browning.
Whisk marinade ingredients together until well combined. Place artichoke halves in a baking sheet, cut side up and brush the cut sides with marinade.
Fill in cavities with the rest of the marinade let them sit for 5 min then flip and bake uncovered for 15 min. Then cover them with foil and bake another 25 min.
While your artichokes are cooking add all dressing ingredients and whisk until well combined. Dip your artichoke leave on the sauce and enjoy!
