Ingredients
Jackfruit Meat:
1 Can Green Jackfruit in brine
1 tsp paprika
1/4 tsp salt
pinch of pepper
1 tbsp tomato paste
1 tsp maple syrup
1/4 tsp cayenne pepper
1 tbsp liquid smoke ( This will give the meat its bbq taste)
1 tsbp olive oil
1/2 onion chopped
6 corn tortillas
Add-ons: Coconut Flakes. cubed mango, chopped red cabbage, parley, lime juice, chillie sauce
Method
Drain jackfruit and rinse with cold water.
Cut the hard part from the jackfruit pieces and using your fingers or forks, break apart the chunks of jackfruit into shredded pieces.
Bring a pan to medium heat, add olive oil and add onion. Saute for 3 min until fragrant.
Add jackfruit and toss for 3 min. Add tomato paste and spices and cover mix well until jackfruit is well cover and cook for 5 min.
Add liquid smoke and mix well until mixture is well combined
In the mean time your jackfruit is cooking Heat up tortillas in a pan over low heat, heat up for about 30 seconds each side.
Assemble your tacos top with mango cabbage and parsley and squeeze lime juice before serving.
