Ingredients
Donuts:
1/2 cup + 2 tbsp unsweetened coconut milk
1/2 tsp cider vinegar
2/3 Cup coconut sugar
1 tsp vanilla extract
1/3 cup melted coconut oil
2 cups coconut yougurt
2 tsp baking powder
1 1/2 cup gluten free flour
pinch of salt
1/2 tsp culinary lavender extract
Icing
1/2 cup powdered sugar
1 tsp matcha
juice of half a lime
4 tsbp unsweetened coconut milk
Add-ons: Coconut Flakes. bee pollen.
Method
Preheat oven to 180C/350F. Rub donut mould with coco nut oil .
Combine coconut milk and apple cider vinegar in a cup mix well and let sit for 10 min- this is your vegan buttermilk.
Add donut wet ingredients to a bowl and whisk until well combined.
In a separate bowl add dry ingredients and mix until well combined. After your vegan buttermilk has sit for 10 min add to dry ingredient mixture mixing constanly.
Once vegan buttermilk and dry ingredients are well combined slowly add wet ingredients mixture to your bowl and mix until smooth.
Grab your donut mould and add you mixture to each donut cavitywith batter till the top.
Bake for 15 min. until donuts are slightly golden or until a toothpick inserted in the middle of the donut comes out clean.
While your donuts are baking prepare your icing by mixing all ingredients in a bowl and whisk until the mixture is soft but drippy.
Once donuts are cooled off dip the in icing mixture and top with some coco nut flakes and bee pollen
