Im obsessed with Mexican food and this is one of my to go recipes as it only takes one pot and 30 min to cook with simple and delicious ingredients. This is packed with lots of proteins and nutrients and will keep you full for a long time!
It serves 4-5 people you can top with fresh avocado, coriander and a splash of lime to make it more fresh and tangy.

Ingredients
1 Tbsp olive oil
1 minced clove garlic (optional)
1 minced chilly ( I used fresh jalapeno pepper)
1 cup raw quinoa
1 cup vegetable broth1 (15-ounce) can black beans, drained and rinsed
1 beef tomato
1 cup can sweet corn
1 tsp cayenne powder
1 tsp cumin
salt and pepper to taste
Top with: 1 avocado, lime, fresh coriander leaves.
Method
Heat olive oil in a large skillet over medium high heat.
Add garlic and jalapeno and saute until fragrant ( about 1 minute.)
Add beans, cumin, chilly powder, salt, pepper and cook for 3-5 min.Add corn kernels and stir for 3 min.Stir in quinoa, vegetable broth and stir all ingredients together.
Bring to a boil; cover, reduce heat and simmer until quinoa is cooked through, about 20 minutes.
Serve immediately and top with avocado, lime juice and cilantro.
