Miso Edamame Dip

We all looooove hummus right? But some times all that tahini, garlic and lemon can get, well boring. Thats were this edamame dio come to the rescue. In this recipe soy beans are the star ( sorry, chickpeas). This dio is full with protein and flavour, plus who doesn’t love a 10 min healthy dip. Change is a great thing sometimes




Serves: About 2 cups

Prep time: 5 min

Cook Time: 10 min


Ingredients


  • 3 cups of edamame beans ( I use frozen)

  • 1/4 cup avocado or olive oil

  • 1/4 cup white miso paste

  • 1 tbsp chopped or grated ginger

  • 1/2 onion chopped

  • 1 chopped red chilli, seeds removed ( optional)

  • 1-2 tbsp lemon juice

  • 1/2 cup water


Method

  1. Heat a pan and add oil, onion, ginger and chilli. Cook for 2-3 min until fragrant.

  2. Add miso paste and 2 tbsp water, mix well and cook for 3 min.

  3. Add edamame beans and cook for another 3 min.

  4. Transfer mixture to food processor, add lime and blend. For a smoother dip add water and blend again.

  5. Adjust any flavours by adding more lime juice, salt or water.
