Oats & Chia Chocolate Pot

I started meal prepping my breakfast lately and I am loving it! Specially when you have an early morning or a busy day starting the day with a yummy and ready to go breakfast is the greatest thing! I have been working on a grab and go breakfast series and this has been my favourite recipe! An oats and chia pudding breakfast pot.


Hearty and chocolatey pot filled with only wholesome ingredients! I love how sweet and satisfying this pot is. The oats and chia seeds give it the perfect boost for that morning energy we all need and the banana and the cacao makes it the perfect sweet combo.


So if you are like me and are rushing through the morning this is the perfect recipe for you! So let's get to it.


Oats & Chia Chocolate Pot


Serves: 2

Prep Time: 15 minutes

Set Time: 1hr


Ingredients

  • 1/2 banana, sliced

  • 3 Tbsp Chia Seeds

  • 1 Tbsp Cacao powder

  • 3/4 Cup Chocolate oat milk ( or any dairy free chocolate milk)

  • 1/2 Cup Oats

  • 1/2 Cup almond milk

  • 1/2 Cup Water

  • 1/2 Tsp cinnamon powder

  • 1 Tbsp maple syrup

  • Pinch of salt

Topins: Banana, cacao nibs, coconut yogurt, bee pollen or coconut flakes.


Method

  1. Combine chia seeds, cacao powder and chocolate oat milk on a bowl or glass. Whisk until well combined and store in the fridge for at least one hour to set.

  2. In the mean time your chia pudding sets cook your oats by adding 1/2 cup of water and 1/2 cup of almond milk to a pot and bringing it to a boil.

  3. Once boiled reduce to low heat add oats, a pinch of salt, cinnamon and maple syrup stir and cook until thicken and all liquid is absorbed, this will take about 5 min . ( You can also add 1 tsp vanilla extract for extra flavour). * If you are using a microwave add all oats ingredients to a bowl combine and cook for 2 min on high.

  4. Divide oats mixture in two parts adding them to a jar or bowl. add half of the chocolate chia pudding to each jar and top with banana, cacao nibs or coconut yogurt.
