They are sweet, chewy and my go to healthy no bake sweet. I usually make them every Sunday and keep them in a sealed container for up to 10 days for when the sweet craving quick in.

Peanut Butter & Choc Energy Balls

Ingredients
1 Cup Nuts ( almonds, cashews, macadamia pecans or walnuts)
8-10 Medijool Dates
2 Tbsp Smooth Peanut Butter
1 Tbsp Coconut oil, melted
2 Tbsp Cacao powder
1 tsp Vanilla extract
Pinch of salt
Method
Soak dates 10 min in hot water.
Add nuts, pinch of salt and cacao to food processor and blend until you get a finely “flour” consistency & transfer to a bowl.
Once dates are soaked remove seeds add to a food processor with the melted coconut oil, vanilla extract, and peanut butter and blend until a smooth paste is formed.
Add date mixture, crushed nuts and mix until you get a dry dough.
Roll into 10-12 balls and place in refrigerator for 30min to firm up.
