Raspberry Crumble Bars

Raspberry Crumble Bar that will help you curb those sweet cravings. They are the perfect go to breakfast bars when you are on the go. Prep them before hand keep them in a sealed container on the fridge and you got your self a sweet healthy breakfast bar to snack on.

You can use any type of jam for this recipe but my favourite combo is raspberries. If you want a more tropical flavour try this with frozen mango or pineapple. These bars are gluten free and made with just wholesome staple ingredients making them a great dessert alternative .


Raspberry Crumble Bars


Serves: 12 Bars

Prep Time: 10 min

Cook Time: 35 min



Ingredients


Raspberry Jam


  • 2 cups fresh or frozen Raspberries

  • 2 Tbsp Fruit or Maple Syrup ( I used Light Syrup from Sweet Freedom )

  • 2 Tbsp Chia Seed


Crust and Topping


  • 1 Cup Almond Flour

  • 1 1/2 Cup oats ( I used gluten free oats)

  • 1/2 tsp baking powder

  • 1/3 Cup Fruit or Maple Syrup ( I used Light Syrup from Sweet Freedom )

  • 1/4 cup Melted Coconut Oil

  • 6 tbsp unsweetened plant based milk

Method


  1. Add all Raspberry jam ingredients to a pot, bring to a boil then reduce heat to simmer continue cooking for 6-10 min until thick, smash raspberries with a spoon or fork. Set aside.

  2. Line a baking sheet with parchment paper and preheat the oven to 350ºF/176ºC.

  3. Add all crust dry ingredients to a bowl and combine. Add melted coconut oil, syrup, plant based milk to dry ingredients and mix until you get a crumble mixture that you can press between your fingers. ( Mixture should be crumbly but moist)

  4. Set aside 1/2 to 2/3 Cup of the mixture and set aside. Then press the rest of the crumble into your line baking tin and press into a even flat layer.

  5. Add jam on top and then sprinkle rest of the crumble on top and bake for 35 minutes. Let cool down before slicing them into 12-14 bars.


Note: Store in a sealed container in the fridge.
