Roasted Lemon Bean Hummus

Meet your new favourite snack recipe a Roasted Lemony White Bean Hummus that you can get done under 10 min to snack on with pita bread, veggie sticks, tortilla chips or to top salad or Buddha bowls.

If you haven’t tried to make your own hummus at home this is the time to try it out. It is so creamy and smooth with a tangy flavour from the roasted lemon that gives it a flavour kick. The fact that it is incredibly simple to make is only a bonus. I love pairing it up with fresh pita bread, seasonal veggie sticks or baguette as it is a great bowl for dipping.

I love topping it up with a splash of olive oil, paprika and chopped parsley to make it extra vibrant and fresh.
Roasted Lemon Bean Hummus
Serves: 2-3 Cups
Prep Time: 5 min
Cooking Time: 5 min

Ingredients
1½ cups cooked white beans, drained and rinsed
⅓ cup smooth tahini
2 tablespoons extra-virgin olive oil
3 tablespoons fresh lemon juice, more to taste
1 garlic clove
½ teaspoon sea salt
5 tablespoons water, or as needed to blend
4-5 Slices of lemon to garnish
1 tsp paprika to garnish (optional)
⅓ Cup chopped parsley to garnish (optional)
Method
Add everything to a food processor and blend until creamy. Add more water or olive oil if you want it extra smooth.
To garnish grab your lemon sliced and roasted for 30-60secs each side on a pan at medium heat.
Top with paprika, red pepper flakes, or parsley and serve with warm pita bread and/or veggies.
