Smokey Roasted Red Pepper & Tomato Soup. The perfect easy to make soup. This soup is a combination of fire roasted tomatoes, roasted red peppers, onions, garlic smoked paprika and basil giving the classic tomato. soup a kick. Pair it up with a grill cheeze sandwich and you’ll have the perfect comfort food combo.
My favourite part of this recipe? You will probably have all of these ingredients at home making it the perfect go to soup. As spring is one step away this soup is the perfect meal as you can have it cold or hot, either way is absolutely delicious!
You can’t go wrong with tomato soup and grilled cheese. Classic comfort food! If you are having one of those " I don't want to cook" kinda nights you could also use fire roasted tomato & pepper tins and skip the roasting process. I personally like roasting them my self it feels fresher but If you are too lazy or to hungry to wait for the tomatoes to roast get 28 ounces fire roasted tomatoes with juices and 28 ounces regular diced tomatoes with juices, sauté onions and garlic on a pan and skip the oven roasting steps.

Roasted Tomato Soup
Serves: 5-6
Prep Time: 15 min
Cooking Time: 45 min
Ingredients
6-8 Beef Tomatoes
1 White Onion, roughly chopped
4-5 Garlic Cloves, skin removed
2 tablespoons olive oil
2 large red bell peppers, roughly chopped
2 Cups Vegetable broth
1 Cup Plant Based
Handful basil
Salt & Pepper to taste
1 tsp Chipotle Paste ( Optional)
Method
Preheat your oven to 400ºF/ 200ºC degrees. Line a large baking tin with parchment paper .
Cut beef tomatoes in fourths. Place tomatoes, onions, garlic and peppers and place in your baking tin . Toss olive oil, pepper and salt to taste, mix and spread out in sheet.
Roast for 35-45 min, until the skin is shrivelled and lightly blistered. Once everything is roasted set pepper aside let them cool down.
Once cooled place all ingredients to a high speed blender and blend until smooth. Taste and adjust flavour if needed ( salt, pepper more basil etc)
Transfer to a pot heat it up and enjoy. Top with fresh basil, coconut yogurt, a side of grilled cheese sandwich or croutons. Enjoy!
