Spicy “tuna” rolls

This recipe is absolutely a game changer when it comes to sushi! This spicy tuna, or how I like to call it spicy tun-mato rolls look like the real thing minus all the tune. So if you are looking for plant based sushi recipe give this one a try.


I like to marinade the tomatoes for 30 min in the fridge for a chilled spicy "tun-mato".




Serves: 4 -5 rolls

Prep Time: 20 min

Cooking Time: 25 min



Ingredients


For Sushi Rolls

  • 2 cups sushi rice

  • 5-7 nori/ sushi sheets

  • 1/2 avocado

  • 1/2 cucumber, julienne.

  • 1 bunch of asparagus


Spicy Marinade


  • 4 beef tomatoes

  • 1 tbsp soy sauce

  • 1 tbsp siracha

  • 1 tbsp se same seed oil

  • 1/4 cup vegan mayo

  • 1 tsp brown sugar

  • 1/4 cup unsweetened coconut or almond milk


Method

  1. Bring a pot of water to boil. Once the water is boiling pinch your tomatoes with a fork. Add to the pot and boil tomato for 2 min. Transfer tomatoes to a bowl with cold water and ice and peel the skin off.

  2. Cut tomatoes into small cubes and drain excess water.

  3. Add marinade ingredients into a bowl and whisk until well combined. Add tomatoes and give it a good mix. Let sit for 15 min in the fridge.

  4. Drain tomatoes to remove excess water or sauce and assemble your rolls by adding tomato “tuna”, cucumber and avocado. Roll them up with a sushi mat and the roll into 10 pieces. Top with more ”tuna” and black sesame seeds.
