Supergreen Falafel Bites

Being a chickpea fan I had to try to do some baked falafel bites and these turned out so good! Soft in the inside but crispy on the outside, packed with a bunch of herbs and greens to get that fibre and protein in! This falafels are a bit different from your regular falafels because they are packed with greens such as spinach, mint and dill so lets get to it!


Have them with some hummus, grilled tomatoes and a yummy hummus or yogurt dip for the perfect combo!

Serves: 18

Prep Time: 60 min

Cooking Time: 10 min


Ingredients

  • 1 cup cooked or canned chickpeas

  • 1 cup fava beans (or replace with more chickpeas)

  • 1 large onion, chopped

  • 1/2 green bell pepper, chopped

  • 1 cup fresh parsley, roughly chopped

  • 1/3 fresh mint

  • 1/2 cup fresh dill

  • 1/4 tsp baking soda

  • 1 tsp salt

  • 2 tsp cumin powder

  • 1/4 tsp ginger powder

  • 1 tsp garlic powder

  • 1/4 tsp oregano

  • 1/2 cup buckwheat or chickpea flour

  • olive or avocado oil for frying

Method


  1. Drain and rinse chickpeas and beans. Place them in a food processor with the rest of the ingredients and pulse until all ingredients are finely chopped and coarse scrapping down the side to make sure all the mixture is well combined.

  2. Line a plate or baking sheet with parchment paper and using you hands form small balls and gently press them down and transfer to your plate or baking sheet. Repeat until mixture is finished, transfer to fridge and let them chill for 45 min. ( If you are preparing ahead chill them overnight to enhance flavours).

  3. Bring a large skillet to medium heat and add about 1 inch of oil and let the oil warm up (about 5 min) before adding your falafels. Once oil is hot add falafels and cook for 2-3 min each side.

  4. Remove falafels from skillet transfer falafels to a plate covered with paper towels and serve immediately. Enjoy with hummus, yogurt dip or tahini sauce!
