Sweet Potato Falafels

If you love falafels but you’ve never try to make your own this recipe is for you! Oil free sweet potato and lentil falafels for the perfect salad bowl or wrap. Easy to make high in rich protein and delicious.


Use this recipe to top bowls, make wraps and even burgers! I topped this salad bowl with spinach, sprouts, coriander, red onions, radish , avocado and a tahini and lime dressing!

Sweet Potato Falafels


Serves: 10-12

Prep time: 10 min

cooking Time: 25-30 min


Ingredients

  • 1 Cup smashed sweet potato

  • 1 Cup Cooked lentils

  • 4 tbsp flour ( I used chickpea flour)

  • 2 Celery Stalks, finely chopped

  • 1/2 white onion, chopped

  • 1-2 garlic cloves, minced

  • 1 handful coriander, finely chopped

  • 1 tsp cumin

  • 1 tsp pepper

  • 1 tsp salt

  • 1 Tbsp sesame seeds to top ( optional)


Method


  1. Preheat oven to 190ºC/200ºF . Line a baking sheet with parchment paper

  2. Add lentils into a large bowl and smash with a fork.

  3. Add the rest of the ingredients into your bowl bowl and mix until well combined. Let it rest for 3-5 min.

  4. Scoop the mixture with and ice cream scoop or large spoon to form balls placing the on top of the lined baking sheet making sure theres enough space between each falafel ball. Top with sesame seeds.

  5. Bake for 25-30 min until slightly golden and crispy.
