Tofu Scramble

One of my favourite savoury breakfast is tofu scramble it is so easy to make and packed with calcium and protein and it will keep you full until lunch time! I always like to combine it with tons of veggies to also get my morning fibre. This is a recipe you MUST give a try.



Serves: 2

Prep Time: 5 min

Cooking time: 10 min


Ingredients

  • 1 block of silken tofu

  • 1/2 onion minced

  • 1/2 serrano pepper, seeds removed.

  • 1 handful of spinach

  • 1 cup cherry tomatoes

  • 2 tsp turmeric powder

  • salt and pepper to taste

  • 1 tsp cumin powder


Add-on: chopped spring onions.


Method

  1. Fry onions and serrano pepper until soft and fragrant. Add cherry tomatoes and cook for 5 min tossing constantly.

  2. Add drained tofu to the pan and press and smash with a for to give the scramble consistency.

  3. Add turmeric and cumin, salt and pepper. Cook for 5 min stirring well and constantly.

  4. Top with spring onions.
