Tropical Mango & Ginger Granola

The best way to have granola is if its homemade. I love making my own granola to avoid all that sugar and artificial flavours. I love making it in big batches and keeping it in my fridge to preserve the crunchiness!



Serves: 6-8 cups

Prep time: 10 min

Cooking Time: 35 min


Ingredients

3.5 cups steel cut oats

t tsp ginger powder

2 tsp turmeric powder

1/4 cup of agave or maple syrup

3 tbsp melted coconut oil

2 tbsp chia seeds

3/4 cup unsweetened shredded coconut


Method

Preheat oven to 180 C / 350 F

Combine all ingredients in a large bowl and mix well.

Line a baking sheet with parchment paper and transfer mixture. Pat it flat with a spatula and bake it for 35 minutes. Stir the mixture every 10-15 min to make sure everything gets equally cooked and crispy.

Let granola cool completely , this is were the crunchy process takes place, so make sure you try it until is cool and very crunchy!
