Unicorn Nice Cream Cups

This is the prettiest nice cream I have yet created. And it was the perfect kick start to an amazing birthday weekend. So if you are looking to treat yourself or someone you love with a healthy and beautiful treat this unicorn cups are for you!



Serves: 2- 8 onz cups

Prep Time: 45min



Ingredients

  • 3 frozen bananas

  • 1 tsp blue spirulina

  • 1/2 tsp pitaya powder

  • 3/4 cup coconut milk

  • 1 cup coconut whipped cream ( See recipe here)


Method

  1. Add 1 banana and 1/4 cup coconut milk, 1 tsp pitaya powder to food processor and blend until smooth. (Place in a bowl in the fridge while you prepare the other nice cream colours.)

  2. Add 1 banana and 1/4 cup coconut milk, 1/4 tsp blue spirulina powder to food processor and blend until smooth. (Place in a bowl in the fridge while you prepare the other nice cream colours.)

  3. Add 1 banana and 1/4 cup coconut milk, and the rest of the blue spirulina to food processor and blend until smooth.

  4. Take your nice creams from the freezer and in a large freezer container add spoon by spoon your nice cream alternating colours.

  5. Once you finish adding your nice cream to your container grab a toothpick and with a swirling motion mix your nice cream layers to slightly mix them.

  6. Cover your container box and freeze for 30 min to 1 hour. Add to a cup and top with coconut whip.
