So if you want a creamy and nice slushy keep ready. I discovered this tip only a while ago and had to try it straight away! But whats the secret ingredient to a coffee shop style slushy? Well the answer is XAMTHAN GUM!
What is xanthan gum?
Xanthan gum is a common food additive that you find in everything from sauces and dressings to ice cream and yogurt and, of course, gluten-free baked goods. In most cases, it's used as a thickening agent, or as a stabiliser to prevent separation of ingredients (like yogurt and drinks). Xanthan gum is completely natural and it comes from fermenting corn sugar with a bacteria called Xanthomonas campestris which breaks the sugar into xanthan gum. Many companies such as Starbucks use it on every single frapuccino recipe to keep their frozen good nice and frothy and to prevent separation!
How to use xanthan gum in frozen drinks?
So even though using xanthan gum seems like and odd ingredient for a frozen drinks without it your slushy will look like an icy mess instead of a smooth and frothy drink. you can find this pretty much on every supermarket now a days since it has become one of the most important factor on gluten free baking. The price might surprise you at first but a little comes a long way! You will need to use just 1/4 tsp per frozen drink you are making, so you the xanthan gum will yield for many many frozen treats.
You will spend the price of aprox. 2 frappuccinos to buy this ingredient but you will be able to make over 100 of them with it! So its worth it right? To use it simply add to a blender with all your frappuccinos or protein slushy recipes (find mine below) blend for 60 seconds and you will have that dreamy and frothy treat we all love!

Vanilla Cream Protein Slushy
Serves: 1-2
Prep Time: 3 min
Blend time: 1 minute
Ingredients
1.5 -2 cups ice
1 cup water
1 scoop of your favourite protein vanilla powder
1 tsp vanilla extract
Method
Place all ingredients in a high speed blender and blend for minimum 1 minute to make the slushy extra fluffy and frothy.
