Vegan Bahn Mi

Forget about boring lunches with these Vegan Bahn Mi. If you are wondering what even is a Bahn Mi? A banh mi is the Vietnamese word for bread ( or baguette) split lenghtwise and filled with many savoury ingredients.

So I bring you the vegan version of the traditional Bahn Mi and trust me you will love this recipe! The asian flavours on this sandwich are absolutely delish! and Its a great idea for a quick easy meal. I usually have some of the fillings prepared at the begging of the week so I can make this sandwiches whenever I need a quick and easy meal.

You can use any type of bread but usually baguette is the best way to go on this one!

Top with fresh red chilli and spicy mayo for that extra quick!

So lets get on with this easy peasy recipe packed with colours and falvours!



Vegan Bahn Mi


Serves: 4

Prep Time: 15 min

Cook Time: 10 min

Ingredients

Sandwich

  • Baguette

  • Coriander

  • Red chilli pepper or jalapeno pepper

  • Spring onions (optional)


Pulled Jackfruit

  • 1 X 400gr tin Green jackfruit

  • 2 tbsp Soy or Tamari sauce

  • 2 tbsp hoisin

  • Juice of half lime

  • 1 tbsp sesame seed or olive oil

  • 1 tsp chopped garlic

  • 1/2 onion chopped

  • 1 tbsp rice vinegar

  • 1 tbsp chopped ginger


Pickled veggies

  • 2/3 cup rice or apple cider vinegar

  • 1/2 cup Hot water

  • 1/2 tsp Salt

  • 1 Tbsp Coconut sugar ( or stevia)

  • 1 CupThinly sliced carrots

  • 1 Cup Thinly sliced cucumber

  • 1/2 Cup Thinly sliced daikon or round radish


Spicy Mayo

  • 1/2 Cup Vegan Mayo

  • 2 Tbsp Maple syrup or agave

  • 1 Tbsp Siracha


Method


  1. Prepare pickled vegetables first by adding vinegar, hot water, salt, and sugar (or stevia) to a glass jar and shaking or stirring vigorously to dissolve salt and sugar. Then add carrot and radish, stir to coat, and push down to submerge. Cover and place in the refrigerator to chill, where they will "quick pickle" until sandwich is ready.

  2. Drain and rinse green jackfruit. Then remove the stem ( the hard bit ) and shred with a fork or fingers & chop stems into small pieces. Bring a large skillet to high heat. Add sesame or olive oil.

  3. Once the oil is hot add onion and saute until soft and fragrant ( about 4-5 min). Add garlic and ginger and cook for another 2 min. Lower heat to medium and add coconut aminos or soy, rice vinegar, lime juice and stir for 2 min coating all the onions, garlic and ginger.

  4. Add jackfruit and stir until well combined. Cook for 8 to 10 min until jackfruit its dark and soft.

  5. Prepare spicy mayo while your jackfruit is cooking by adding all mayo ingredients to a bowl and mix until well combined.

  6. Slice baguette in half spread spicy mayo and fill with pickles, jackfruit, fresh coriander, chilli, crushed peanuts and enjoy!

This recipe didn't make sense. Like the picture shows cilantro, but the recipe called for spring onion. Also in the instructions it mentions ginger, but its not on The ingredient list. Also at the beginning it mentions banana and coconut yogurt as well as coriander but nowhere in the recipe does it call for those things. Very confusing over all.
